TWO VEGAN BREAKFAST IDEAS FOR BANANA LOVERS

Collage

1. CEREAL with BANANA-CASHEW MILK

For 1 portion you need:

Cereal:
1 tbsp   shredded flaxseeds
1 tsp     chia seeds
1/4 cup oats or unsweetened cereal of your choice ( I always do a mixture of
a Quinoa müsli with a random cereal such as one with fruits from Alnatura)

Milk:
2 ripe bananas
1/4 cup or a small handfull of cashews
1/3 cup of water
(70ml)

To make the milk blend the bananas, cashews and water with a blender until it has a smooth concistency. Don't worry, it will become brown after a short time because of the banana but it doesn't effect the taste. Pour the milk into a bowl and mix with all of the ingedients of the cereal. You can top it with blueberries and more bananas as I did or any other fruit of your choice if you want.

I love the nutty taste of this recipe as well as the concistency you get at the end when everrything is mixed together.

2. BANANA ICEREAM

For 1 big portion(4-5 scoops) you need:

3 small frozen bananas  (chop bananas before freezing them)

Blend the frozen banana chunks in your food processor until you get a smooth icecream consictency. Sometimes its neccesary to add a little bit of water to make everything smoother so if you have trouble try this.
Optional: To add a little bit of flavour to your icecream you could use carob (or cocoa) powder as I did for the two dark scoops or maybe vanilla extract- just try out different things you like. I'll defenitly make this with shredded coconut next time.
When you've finished blending everything and have formed your scoops you can top your icecream with fruits or carob powder, cinnamon etc. - again there're no limits to your creativity. I personally like the sour taste of the frozen berries together with the sweetness of the banana best.
ENJOY!
